FOLKLORE TINTO
Composition of varieties
80% tannate, combined with pigmentation with 20% first pressing peels of Petit Manseng.
Growing area
Cerro Chapao, Rivera, Uruguay. At an altitude of 250 meters above sea level, with a continental climate and significant temperature differences between day and night.
Soil profile
Soils of alluvial origin from volcanic materials that have been washed away over millions of years, creating deep red deposits rich in iron, with excellent drainage.
vintage
Manually harvested in 15 kg boxes.
Production process
The Tenat clusters are placed in tanks without separating the stems, and combined with a certain percentage of Petit Manseng grape skins from the first pressing. Fermentation takes place with natural yeasts in stainless steel tanks, with stirring twice a day for 6 days. The second fermentation continues in used wine barrels, where malolactic fermentation is completed, and the wine undergoes a natural shading process for several months.

Elaboration
Tannat clusters are placed whole in tanks without destemming, combined with a percentage of first-press Petit Manseng grape skins. Fermentation is carried out with native yeast in stainless steel tanks, with pumping over twice daily for 6 days. The second fermentation occurs in second-use wine barrels, where malolactic fermentation is completed. The wine is naturally clarified over a few months.
