Composition of varieties
80% Trebbiano, 20% from Lazio.

Growing area
Cerro Chapao, Rivera, Uruguay. At an altitude of 250 meters above sea level, with a continental climate and significant temperature differences between day and night.

Soil profile
Soils of alluvial origin originating from volcanic materials that were washed away over millions of years, forming deep red deposits rich in iron, with excellent drainage.

vintage
Manually harvested in 15 kg boxes.

Preparation process
The Malvasia and Trebbiano clusters are separated and pressed separately. Fermentation begins with natural yeasts in stainless steel tanks. Before the alcoholic fermentation in each tank is completed, a blending is carried out to prepare the blend for bottling. In the traditional method without final filtration, the wine retains a natural turbidity from the yeast.

Preparation
The Malvasia and Trebbiano bunches are destemmed and pressed separately. Fermentation begins with native yeast in stainless steel tanks. Before each tank completes alcoholic fermentation, the blend is prepared for bottling. An ancestral method without disgorgement, resulting in natural cloudiness from the yeasts.
