Composition of varieties
100% Arinaroa.

Growing area
Cerro Chapao, Rivera, Uruguay. At an altitude of 250 meters above sea level, with a continental climate and significant temperature differences between day and night.

Soil profile
Soils of alluvial origin originating from volcanic materials that were washed away over millions of years, forming deep red deposits rich in iron, with excellent drainage.

vintage
Manually harvested in 15 kg boxes.

Production process
Whole Arinaroa grapes are kept in a closed container for 10 days, then pressed and the alcoholic fermentation is completed in a new stainless steel tank. The fermentation is carried out with selected natural yeasts. The process involves minimal intervention, with SO2 only at the bottling stage, and no filtration or shading.

Handpicked into 15 kg boxes.

Elaboration
Whole Arinarnoa berries are kept in a closed tank for 10 days, then pressed, with alcoholic fermentation completing in a new stainless steel tank. Fermentation is conducted with selected autochthonous yeasts. Minimal intervention, with SO2 added only at bottling, and no filtering or clarifying.
